Comments: The fruity sweetness in the beer will mix nicely with the honey to compliment and the vinegar to contrast. The ligher flavoured beers will allow the delicate flavours of the avocado and seasonings to come through.

3 – 4 portions.

Herb Avocado Dressing

1 large Garlic clove finely minced
1 Tbs Honey liquid
6 pinches Salt
3 pinches Coarse black pepper
2 ½ Tbs Organic apple cider vinegar
1 ¾ Tbs Balsamic vinegar
4 Tbs Extra virgin olive oil
1 Tbs Finely chopped herbs (basil, cilantro and parsley)
½ Ripe avocado, cut in small cubes.

Mixed Salad

10 oz Organic mixed lettuce
1 Orange cubed into small pieces
1 Roma tomato cubed into small pieces
¼ Field cucumber cubed into small pieces
½ Avocado spooned into chunks
Handful Seasonal sprouts for garnish


Add all the ingredients of the dressing into a bowl and mix well with a whisk. Add oranges, roma tomatoes, cucumbers and lettuce and toss well with dressing. Arrange on plate and garnish with avocado chunks and sprouts.
