Tune into this month’s Spirit City as Alyssa drops into to Torafuku on Main Street to talk cocktails with mixologist Max. Nestled on the border of historic Chinatown, Torafuku invites you to experience simple, yet adventurous interpretations of pan Asian flavours. Explore contemporary dishes crafted with local ingredients sourced from local farms complemented by carefully selected wines, local craft beers, and a fashionable cocktail list.

Diners are encouraged to enjoy innovative, yet affordable shared plates where east meets west, in a dynamic open concept space.

Here are the recipes plus a bonus cocktail recipe for the old fashioned we briefly mentioned:

Strange Brew:

1 1/2 oz cantaloupe infused pisco

1/2 oz Cocchi Rosa

1 oz lemon juice

1/4 oz honey

Shaken over ice, fine strain over rocks in a Collins glass, top with Strangefellows Talisman. Garnish with mint sprig and a slice of cantaloupe

Bohemian Triangle:

45 ml Old Grand Dad bourbon

15 ml Goslings dark rum

1 bar spoon of Siete Misterios Espadin mezcal

1 bar spoon of maple syrup

3 dashes Apothecary coffee & cacao bitters

Combine and stir over ice until diluted, strain over rocks and garnish with orange peel

Muskoka Brewing Mad Tom IPA

Mad Tom IPA

Opened in 1996 in the heart of Ontario’s cottage country, Muskoka Brewing has grown to employ over 70 employees. They have a strong belief in purity, freshness, independence and creativity. I was introduced to their brews several years ago while on a trip to Toronto, and given my love of IPAs – Mad Tom was the first one I tried.

Mad Tom comes in a 341ml long neck brown bottle, but what caught my attention was the Adirondack chair with a bottle on the arm rest on the neck.

In the glass, this beer poured a beautiful honey colour with good carbonation and a decent off white head. The nose has hints of citrus as is common in most IPAs. The mouthfeel is has some weight to it with average carbonation on the tongue. The flavor has strong Chinook and Centennial Hops which definitely sticks around in a pleasant fashion.

Rating 4/5 – Overall a great IPA that i could definitely see myself have a few of in a sitting.
